    Instructions
    1. In a stand mixer or large bowl, combine all ingredients except the chocolate chips. Mix until well blended.
    2. Fold in the chocolate chips gently.
    3. Chill the mixture in the refrigerator for 15 minutes, this makes it easier to handle.
    4. Roll the mixture into 1-tablespoon-sized balls. You should get about 18 to 20 balls, if your kids don’t sneak bites while you’re rolling!
    5. Enjoy immediately, or store leftovers in an airtight container in the fridge for a quick, protein-packed snack anytime.
